Alosetone sugar (English: Psicose) belongs to the category of hexoses and ketoses and is the diastereoisomer corresponding to the third carbon atom of D-fructose. Its IUPAC name is (3R, 4R, 5R)-1,3,4,5,6-pentahydroxyhexan-2-one. It has special functions that are beneficial to human health, such as regulating blood sugar, and has been rated by the US Food Navigation Network as the most promising sugar substitute. It is mainly prepared by the enzyme immobilization conversion method, which involves cloning expression, separation and purification of the enzyme, and then immobilization through an appropriate carrier for conversion.

Aloinose (D-psicose) is a six-carbon sugar with extremely low content in nature. It is the diastereoisomer at the C-3 position of D-fructose. D-aloinose is difficult to be digested and absorbed, and it provides almost no energy for biological activities. Therefore, it is a very useful low-calorie sweetener. In the field of medicine and health, D-aloinose can inhibit fat liver enzymes and intestinal α-glycosidase, thereby reducing the accumulation of fat in the body and inhibiting the increase of blood sugar concentration. Iida and Hayashi discovered that adding D-aloinose to the diet can reduce post-meal blood sugar responses, improve  sensitivity and glucose tolerance. Additionally, compared to other rare sugars, D-aloinose can more effectively eliminate reactive oxygen free radicals. In mouse experiments, it was found that D-aloinose can prevent the damage to the testicles caused by di-(2-ethylhexyl)-phthalic acid by inhibiting the production of reactive oxygen. Moreover, D-aloinose has a neuroprotective effect on 6-hydroxydopamine-induced cell apoptosis and can also inhibit the expression of monocyte chemoattractant protein MCP-1 induced by high glucose concentration. This indicates that D-aloinose has potential functions in treating diseases related to nerve tissue degeneration and atherosclerosis.
